The Asparagus Pea is an unusual low growing plant which produces attractive crimson flowers that are very attractive to bees. The vegetables are angular pods which should be picked small – no longer then 1 – 2 inches long – and bend easily. Larger pods will become fibrous and stringy.

The genus epithet, meaning “with four wings,” describes the four little frills or fins that line the plant’s edible seedpods. When sliced, they look like green stars.

Best eaten as soon as possible after harvest. The pods will, however, keep for several days in the vegetable drawer of your fridge.

How to prepare:

  • Steam or lightly cook the pods whole to preserve their subtle asparagus-like flavor.
  • These pods are an excellent substitute for asparagus in most recipes and perfect for fresh-flavored stir-fries.
  • Steam whole and toss fresh in melted butter with a dash of lemon juice.
  • Stir into mac and cheese before baking (even better when you add ham too!).

Preserve by pickling in lime juice or white wine vinegar.
